The title may have you a little confused, trust me I was confused too. But apparently, one South Carolina town is considering itself the home of pimento cheese. I mean, pimento cheese... really? Pimento cheese is certainly a staple in the South and one of South Carolina's favorites, but who would have guessed South Carolina town be deemed it's home? According to Yahoo! News, Columbia, SC is home to one of the oldest pimento cheese recipes. Crazy, right?

Apparently, the oldest pimento cheese recipe was written in a Columbia cookbook that was published in 1912. That is truly some old-fashioned cooking! Janie DuBose wrote the recipe which includes the majority of the same ingredients used in many of today's pimento cheese recipes. The recipe from Dubose is as follows in the book:

PIMENTO SANDWICHES, Miss Janie DuBose

Ten ct. can of pimentos; 1-2 cup of grated cheese.
Chop the pimentoes fine, add the cheese and put in mayonnaise to right consistency and spread on thin slices of bread. A little finely chopped sour pickle is an addition to this.

How cool is it to find an original recipe from so long ago that is part of the reason for pimento being a Southern staple.
