So, let’s see what the Carolinas are serving up. For North Carolina, the go to Christmas cookies are mint twist meringues. I personally have never had nor tried this recipe before, so this is quite interesting. It’s a light and airy meringue cookie with a burst of peppermint and finished with mint candies and baking cocoa. Sounds kinda good to me, worth the try for sure. Now, heading to South Carolina its favorite Christmas cookies are Lara’s tender gingersnaps. Specifically out of Mauldin, Lara’s gingersnaps are causing quite a buzz. Gingersnaps pretty much sing the holidays with every bite so this makes total sense.
