I love carrot cake in all shapes and forms. From two layers to one layer, without gluten, with gluten, with rasins, and without, with cream cheese icing or no icing. My biggest quest is to make a carrot cake without so many darn calories because once I slice it I’m going to chow down at least 3 pieces within a 24 hour period. All cakes contain large amounts of concentrated carbohydrates and fat which makes it tastes so good! Many of my friends are going Keto to avoid unhealthy cakes, treats, and dinners, and I’m learning this Keto thing as I go.
